Last year, we did a quick tour of Spain's Basque cider region during the 'txotx' season. For a few months, cider houses open their doors and invite people in to enjoy a first taste of the season's cider. There's often food, good company, and cider tapped straight from the wooden tanks, poured in an arc directly into your glass.

This year, we naturally fermented a batch of cider - a practice we can't usually explore in our cellar. To celebrate the uniqueness of this wild ferment, we're hosting an event in the 'txotx' style - plenty of snacks, and the longest pours we can manage here.
